Sophy Sunshine's Ginger-Lime Dressing
2 tablespoons olive oil
1 tablespoon rice wine vinegar
1 tablespoon lime juice
1 1/2 tablespoons fresh minced gingerroot
(finally!! a use for the other sides of your cheese grater!!)
1/2 tablespoon chunky peanut butter
1 tablespoon water
1 teaspoon honey (optional, don't use the honey if you're going to have any kind of fruit
or sweet stuff in the salad)


Put everything in a magic jelly jar, clean with a tight fitting lid and shake it like it's a Martini for James bond.

This is nice on a salad with say, cold rice noodles, cabbage or bok choy, fresh basil or mint, shredded carrots & radishes, cucumbers, maybe some nice marinated tofu chunks (but that's another story...)


And of course, don't forget to garnish w/ peanuts!
